Muffin Topless

Question: What can you can make in your muffin tins that won’t give you a muffin top? Answer: Breakfast and dessert!

Let’s start with dessert. Bring on the….Mmmmm

Protein Peanut Butter Cups

  • 1 scoop chocolate protein powder
  • 1T natural peanut butter
  • 1/4 cup water

Stir. Spoon into lightly sprayed mini muffin tins. Pop in the freezer until solid. Makes 4 peanut butter cups.

If you saved room for breakfast, here’s another simple recipe for you…

Egg No-McMuffin Tops

  • 6-8 eggs
  • Veggies
  • Lean meat (totally optional and already cooked)
  • Cheese
  • Salt and pepper

Whisk the eggs. Mix in your favorite vegetables, meat, and cheese.  Salt and pepper to taste. Pour into prepared muffin tins. Bake at 350° for 25 minutes. Makes 6 crustless quiches.

These two recipes have a lot in common:

  • Both are quick and easy to prepare
  • Both are made in muffin tins
  • Both are packed with protein
  • And, both go great with a cup of coffee!

The egg ones are great in mini muffin tins for wee ones. Well, wee ones that aren’t picky, mine would only eat it if I covered it in buttercream frosting and sprinkles.
