Pumpkin soup for you

Remember this Seinfeld Episode?


I couldn’t help but think about this clip when I was making Pumpkin & Spice Soup just for you.

I found this recipe Elaine, I mean,  Mellissa posted when I was checking out Zesty’s site.  Mellissa calls this recipe Curried Pumpkin & Apple Soup which is entirely appropriate, but when I made it, I forgot the curry because I was in too big of a hurry.

Nevertheless, if you like a healthy, hearty, hot soup (and by hot I mean both temperature and spice)  you just might fall for a medium Pumpkin & Spice Soup:IMG_5112-1

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1/2 tsp cayenne
  • Pinch red pepper flakes
  • 3 apples, cored and chopped
  • 15-oz can pumpkin puree
  • 2 2/3 cups low-sodium chicken broth (I used vegetable broth)
  • 2/3 cup water
  • 1 tsp cane sugar (I used stevia)

Directions

  1. Pour oil into large saucepan and place over medium heat.
  2. Add onion, garlic, curry, cumin and cayenne.
  3. Saute, stirring often until onion is soft.
  4. Stir in apples, pumpkin, broth, water and sugar.
  1. Bring to boil, cover and reduce heat to low.
  2. Simmer for 25 minutes, stirring occasionally.
  3. Puree soup in a food processor or with a hand blender, to achieve desired consistency. I used my Magic Bullet.
  4. Just before serving, return to pot on low heat.

This soup is full of flavor and will keep you full, so there’s really no need to serve it with anything else. Therefore, please don’t bother asking for bread or no soup for you.

I have never tried pumpkin soup. I printed off the recipe and may try it this fall. I usually do more of the minestrone, chili, and noodle soups, but everyone may really like this. Thanks for sharing!

I LOVE PUMPKIN!!!!!!! In Australia we don’t have canned pumpkin…but can I tell you something.. i don’t miss it AT ALL. It’s SO much better fresh. I challenge you to roast some down…then put on top of a pizza :) Looks delicious.

Michelle, I have never roasted a pumpkin. BUT, I accept your challenge! I’ll be making a (pumpkin) roast this week! You’ll be hearing about it, for sure. ;-)

I lived and worked in Manhattan circa 1996, so my DH (then fiance) and I went and found the Soup Nazi, It was a Sunday and the shop was closed, but we peeked in the window and he was there! And yes, he looked mean! Now I make soup with my 4 year old daughter all the time. Her favorite (to make, not to eat) is lentil soup and she always reminds me to add the bay leaf.

Melissa! How fun…since you didn’t get soup that day, did you at least snap a picture? By the way, I love that you get your kids involved in cooking…how many 4 year olds know what a bay leaf is? That is awesome!

Speaking of spices I added a little All Spice in this soup, too. Of course, I made enough to feed a small army so I might sprinkle some cinnamon or nutmeg on top of my next serving or two.

Thanks for visiting my blog. As for the recipe of my ice cream, I use 3/4 cup sugar, 1 cup vanilla soy milk, 2 cups half and half (chilled), mix it all up. Add some vanilla, cinnamon, and Nutmeg, mix some more, then add about 1/2 cup pureed pumpkin. I pour it into the ice crema maker and then after about 22 minutes I stop the machine and stir in the walnuts!! Oh, it’s delicious.

That looks quite tasty! I had pumpkin soup once on a vacation in the Caribbean and it was one those things where we thought “well that sounds weird” and it was incredibly delicious. Roasting a pumpkin is not that difficult at all, well once you get all those guts out! I just read something about roasting pumpkin seeds too and how good they are for you.

Thank you so much for the pumpkin ice cream recipe, Candid RD! As soon as I buy an ice cream maker, this is the first recipe I’m going to try.

Suzanne, You’re right…pumpkin soup isn’t something you see on many menus. That reminds of the pumpkin risotto I had when on a business trip in Napa. One of the best meals of my life!

Kevin, You are just rubbing it in that you now own that iMac. Oh, and Morton called, they’ve named me Pumpkin Queen for 2009!

Kevin, Yes, I was in the Morton Pumpkin Parade. I was in costume so you might not have recognized me. Next year, I’m going to win a big blue ribbon in the pumpkin eating contest. Or something like that.
