Eat Like A Saint on Superbowl Sunday

What’s your game plan for Superbowl Sunday?image001

  • Do you plan on eating your “favre”orite junk food?
  • Do you shuffle your way through the chips and salsa?
  • Do you devour everything in your “Fridge”?
  • Do you go out of your “el”way to overstock your Super Bowl?

Why not plan on making some healthy substitutions? Try being a Saint and subbing Chobani Greek Yogurt in place of mayo, heavy cream, or sour cream in your favorite recipes.

Here are two recipes from Bethenny Frankel you might want to tackle…

Plain Frozen Yogurt

  • 3 cups Low Fat Greek Yogurt
  • 1/2 cup + 2 tablespoons raw sugar
  • 1 tsp vanilla extract

Combine, chill for an hour then put in ice cream machine as directed.

Strawberry Frozen Yogurt

  • 3 cups Low Fat Greek Yogurt
  • 2 cups strawberries (sliced)*
  • Juice of 1/2 lemon
  • 1/2 cup + 2 tablespoons raw sugar

Combine strawberries, lemon juice and sugar in a saucepan over medium high heat until bubbly. Mash with potato masher and let cool.  Combine with 3 cups Greek yogurt and chill for an hour. Put in ice cream machine as directed.  *Substitute any fresh or frozen fruit you happen to have lying around.

I just recently got into using greek yogurt, before I was using Dannon Light N fit. Anyway I just make plain old yogurt parfait with berries and fiber one mixed in.

Can’t find Chobani where I shop. :( I’m making stromboli but this year: turkey meatballs, lots of spinach, a reasonable amount of cheese. Will also do mostly fruits & veggies for snacking. It’s a start.

I’m not a huge football fan, so I don’t feel the need to celebrate with junk. I do love Greek yogurt-based dip. Plain Greek yogurt + capers + diced cucumbers + feta is a great dip for baked “chicken fingers.”

I heart Chobani!!! Use it whenever it calls for mayo in recipes!!! especially potato salad but my spinach crab dip is always a hit!!! I’m making it this sunday for the pro-bowl since I’ll miss half of the superbowl at my daughter’s dance comp. Here is my recipe. I hope you guys enjoy!

Hot Spinach Crab Dip
Ingredients
1 (10 oz.) pkg. frozen chopped spinach, thawed (do not use fresh)
1 1/2 c. sour cream
1 c. Chobani Plain Greek
1 (4 oz.) pkg. Knorr vegetable soup mix
1 (8 oz.) can water chestnuts, finely chopped (optional I don’t use it most times)
3 green onions, finely chopped
2 garlic cloves, minced
3 tbsp olive oil
1 cup Lump Crabmeat (I use Phillips Backfin or Lump Crabmeat)
2 tsp old bay
2 jalapeno peppers (optional)
saute garlic in olive oil with lump crab meat and old bay. Set aside and allow to cool. If you are using fresh spinach chop finely. Frozen spinach: squeeze spinach dry. In bowl mix spinach, sour cream, yogurt, soup mix, water chestnuts and green onions. Add lump crab meat and mix well. Cover and refrigerate for at least 3 hours or overnight. Garnish with jalapeno peppers. Serve with raw veggies, crackers or bread.

Great contest! I’d say my favorite is Killer Cornbread
Ingredients:1 1/4 cup whole grain cornmeal3/4 cup whole wheat flour4 teaspoons baking powder1/2 teaspoon salt1/4 cup sweetener1 egg1 cup milk1/4 cup plain Chobani2 tablespoons vegan butterPreheat your oven to 425 degrees. In a bowl, sift together the first 5 ingredients(unless using a liquid sweetener like honey or agave in which case just the first 4). Beat in the egg, milk, and any liquid sweetener if using. Add in the Chobani and butter and mix until blended. Move into an 8×8 baking pan and bake until browning on the outside(about 20 minutes).

I got an ice cream maker a couple years ago and used it all the time back then but haven’t since! Once the weather warms up I’ve got to make that yogurt!

I am no cook or even creative like that so…. I got nothing BUT I do love the Greek yogurt! I have no plans of overeating on superbowl Sunday. In fact, I don’t even plan on watching it! :-)

Let’s see… I would make like a frosting or something… A little yogurt, some powdered sugar, some almond or vanilla extract. Blend it up and spred a generous amt on a cupcake, and you got Chobani frosted cupcakes…

I’ve never had Greek yogurt, but this could be a future menu item at Batter UP! ;)

I love Chobani. It is better than ice cream, so I like it just the way it comes out of the tub. (Anyone who comes near me in the dairy section hears about how good it is, and much healthier than any of the other yogurts.)
However, I did find one thing I really liked “cooking” with Chobani- If you add a few spoonsful to a can of cream cheese frosting, and add a some Marshmallow Fluff, you get a super frosting that tastes fresh and light! It is great for frosting a cake or for dipping fruit. (Strawberries, pineapple chunks, apple chunks, banana chunks….(Shhh Hershey’s kisses…

Should I say publicly that I’m not watching the super bowl? (I can see the strange looks and hear the gasps =0).

I love chobani yogurt, but it does not agree with my stomach sadly enough.
