A Dozen Reasons to Eat Eggs

IMG_7627There are a dozen things I like to make with eggs:

  • Frittata
  • Egg salad
  • Hard boiled eggs
  • Scrambled eggs
  • Omelets
  • Quiche
  • Crepes
  • Egg bakes
  • French toast
  • Deviled eggs (ok, actually I prefer just to eat the ones my sister-in-law Dawn makes)
  • Easter eggs
  • Egg quesadillas

I can probably think of a dozen reasons why eggs are good for you, too. I’ll just hit a half dozen reasons I learned about Eggland’s Best Eggs nutritional profile really fast so we can all go grab some breakfast. My favorite way to make eggs is the frittata with a combo of eggs and egg whites and lots and lots of veggies. Perfect for breakfast, lunch, or dinner!

I like to hardboil eggs for breakfast. I also love to make deviled eggs, and I dont just make them for BBQs or dinners. Sometimes I just have them for a snack while watching TV, much better than chips and dip!

OH man, way too many way!! My husband is from New Zealand so we like to have boiled eggs with marmite and a little butter. I know, weird, but its good!

I always have hard boiled eggs in the fridge. My husbands cuts it up on his salad for lunch during the work week. I either put them on my salad or eat them plan. I just love eggs and super filling!

Since I’ve lived in Austin, it’s breakfast tacos and migas all the way! I’m so happy my 2 year old now likes eggs, scrambled eggs (prepared per Julia Child’s instructions) are a quick, easy meal option for her.

Herb Egg and Spinach Omelet. So easy. 3 eggs, mixed herbs, spinach, reduced fat sharp cheddar cheese…ah…It’s EGG-cellent. Yeah, I know. That’s corny. This omelet is so yummy. Plus, It’s not just for breakfast. I sometimes eat it for lunch, too!

My favorite is simple: scrambled eggs with cheese. But then I also live scrambled eggs with veggies, omelets, egg sandwiches, hard-boiled eggs in salad, quiche, French toast….. and on and on.

Two actually…
A “mish-mosh” scramble that involves putting everything from last nights left over chicken to hot peppers in it – everything’s game!  or…
A “hot n’ spicy” scramble with salsa, black beans, hot peppers and a little low fat cheese.

I love eggs so much, I could eat them everyday!
My favorite way to make eggs is to make ham crisps… take one cupcake tray and place a thin slice of reduced fat ham in each cup and fill with whatever you like (mushrooms, onions, peppers, etc) then whip up three eggs and distribute evenly in the cups and top with a little reduced fat cheese, cook for about 15 minutes on 400 degrees…. it’s like a breakfast cupcake!!! :):):)

Poached on english muffins with salt and pepper……benedict style on a splurge. When I was little we had ‘Grandma’s eggs’ at Grandma’s of course…she would soft boil eggs and put them in a cup with buttered toast ripped into peices. We would mix with a fork, add a little salt and pepper, and eat them up! My kids still love ‘Grandma’s eggs’…..umm so do I!

Eggs are de-lish-us in myriad ways: omelettes, over-medium, boiled, deviled, added to tuna salad, quiche, chopped over tossed salad, in a sandwich, added to meat loaf to hold together the lean beef … oats … bar-b-que sauce, scrambled, in a protein shake, poached, and on an english muffin!

I like poached, but my macaw Rocha loves eggs scrambled with cheese and veggies. He wins every morning! We share a homemade hi fiber wholegrain muffin on the side, peanutbutter on his half. (My husband prefers his cereal and banana, so what can I say?!)

My favorite way to make eggs is deviled eggs. But instead of traditional deviled eggs I like to take out the yolk and replace it with homeade hummus! Yum!

My favorite way to make eggs is to cover them in cold water and bring the water to a rolling boil and then time them for 3 to 5 minutes. I like the yolks to be semi-runny (3 minutes) or more solid but not real hard (5 minutes). Then I run cold water over them. I throw them in a paper bag and take them to work to eat at break time. I make them for my kids for their lunches and for breakfast if they’ve made a different sort of lunch. I take a spoon and crack them in half and scoop out the insides. no peeling. Eggs are GREAT food.
