Soup Kitchen

Growing up it was tradition to go to our church soup kitchen on Friday’s during Lent. We’d feast on vegetarian soups and homemade bread, and I would flirt with boys visit with all of my friends.

When my niece Ali and I made this soup together last week, it totally reminded me of these gatherings. And, since the soup is vegetarian, it’s perfect for a healthy, Fitness & Spicy, Lenten meal. Ali found this recipe from Rachel Ray and we went to town, whipping up…

IMG_7699Indian Spiced Chickpea & Fire Roasted Tomato Soup

From the Kitchen of Rachel Ray

Ingredients
  • 1/4 cup extra virgin olive oil (EVOO), 2 turns of the pan
  • 2 cloves garlic, chopped
  • 2 cans chickpeas, drained
  • 1 small onion, coarsely chopped
  • 2 teaspoons ground cumin, (2/3 palmful)
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon turmeric
  • Salt and pepper
  • 2 cups chicken or vegetable stock
  • 1 can fire roasted tomatoes (28-ounces)
  • 1 cup plain yogurt
  • Warm pita, any flavor or variety, toasted
Preparation

Heat a medium pot with EVOO over medium heat. Add garlic and cook 2-3 minutes. Grind the chickpeas and onion in food processor. Add to pot and cook 5 minutes to sweeten onion. Season the chickpeas with cumin, cardamom, turmeric, salt and pepper. Stir in stock, then tomatoes. Simmer soup 5-10 minutes to combine flavors.

Serve with a dollop of yogurt and warm pita for dipping.

Ali and I added more spice than the recipe called for and served it with toasted low-carb tortillas. And guess what? This hearty soup tasted great despite how bad it looks in this photo.

Now I really must go grab a bowl of soup and then hit the gym…I have a no nun-sense workout ahead of me!

oooh I love some soup – it is the only reason I don’t want winter to be over – so I can keep making soup!

On another note, do you track your cals/macros with the soup? I always had a hard time doing that – like I could never get the numbers straight,

Jessica, I haven’t figured the macros this recipe, but this one should be pretty easy to calculate as the main ingredients are really vegetable broth, chickpeas, tomatoes, onions, and a little olive oil….the rest of the ingredients are really just spices. According to Rachel Ray, this recipe serves 4 (however, I’d say it makes more like 8!)

Yum, that looks tasty. Always looking for new soup recipes, thanks. I have some leftover hummus that no one else liked – store didn’t have my reg. brand. Wonder if I could just use that, then add the rest of the ingredients?

Yum, Joanna! How many servings do you think this makes? I am having a little soup supper this Friday and this sounds better than what I had planned. When I make my own pita chips, I just slice them into triangles, brush with EVOO and oregano, then toast in the oven. Delish!
