Wonder Bread In a Jiffy

So, I picked up a few nuts at the grocery store yesterday. Peanuts, that is.

And I went straight home and whipped ‘em into perfect shape for this wonder bread recipe I found in my Vita-Mix cookbook.

Ladies and gentleman, fresh from the Fitness & Spice oven I give you…

IMG_7984Peanut Butter Bread

  • 1/2 cup Natural Peanut Butter
  • 1/3 cup Sugar (or your favorite sugar substitute)
  • 1 1/2 cup Milk (I used unsweetened Almond Milk)
  • 1 cup Whole Wheat Flour
  • 1 cup All Purpose Flour (I used garbanzo flour because that’s what I had in the house)
  • 4 t Baking Powder
  • 1 t Salt

Preheat oven to 350 degrees. Blend peanut butter, sugar, and milk together. In a separate bowl, combine dry ingredients then add it to the peanut butter mixture, blend. Pour batter into a bread loaf pan coated with non-stick spray. Bake for 45-50 minutes.

You’re probably wondering…

  • Will I make this bread again and again? YES!
  • Should you top this bread with jelly? Silly question. Next…
  • Will I add banana and/or chocolate chips next time? GUARANTEED!
  • Will I try it with homemade almond butter? GOOD IDEA!
  • Is there any left? Right.

Now I really must go hit the gym and head to work…I’ve got to raise some dough!

Oh god. What’s not to like? Peanut butter + bread. In one. I see my week unfolding right before my eyes and it’s going to involve a LOT of this bread.

Holy mother of loaves! I love it and I am not a pb kind of girl. Does nothing for me…but the thought of putting jelly on that just made me hyperventilate in my office. Imagine warming that…oh I need to open a window and get some air…lol…;o)

YUM! My standard banana bread recipe calls for peanut butter. It’s not very healthy, but I bet this would satisfy my craving. Mmmmm … thanks for sharing, J.

I AM SOOOOO going to make this when I’m done dieting for a show. Just as you and almonds had a break up. I have had to break up with nuts until after my show. =( Nuts are my best friend and I will miss them dearly.

Seriously?? this is a GREAT recipe!! And there is such thing as garbanzo flour?? That’s crazy. What’s crazier is that I have never made my own nut butter. I need to get on top of that, pronto.

Possibly because I just did 40 miles on the bike, but that looks amazing! Pretty sure I’d scarf half of it in one sitting though! Peanut Butter is my kryptonite, gotta be careful with it.
