Donna Bush says:
May 4th 2010OK, I do use white flour but only because I’ve not had time to experiment w/ anything else. I use the Reduced Fat Bisquick. Follow recipe on box, except: in place of egg, use egg white; milk –> soy milk; sugar –> stevia. Add as many chopped strawberries as you like. (adjust stevia to taste, OR if you have time to chop them ahead, add the stevia to the berries and then you don’t need to add it to the batter) Sprinkle in some nutmeg and orange peel for a little zing and zest. Add some vanilla. Good to go.

May 4th 2010Ummm… where did you find that??? Too funny! About pancakes, do you know how to flip them so they don’t run all over the place? Clearly, I cannot be entered in this contest…

May 5th 2010Wow — a GUITAR pancake flipper would certainly add to my current collection which consists of a GHOST and a PUMPKIN. This recipe is not original — from our local paper a while back. But is gooood. MULTI-GRAIN PANCAKES
- Generous 1/3 cup quick cooking or rolled oats
- Scant 1 cup all purpose flour
- 1/3 cup whole-wheat flour (can substitute buckwheat)
- 1/3 cup yellow corn meal
- 2 teaspoons granulated or light brown sugar
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt, or to taste
- 1 ½ to 2 cups milk (may use dairy, soy, rice, or nut milk)
- 2 tablespoons light molasses (may substitute light brown sugar or maple syrup)
- Vegetable oil or butter for griddle
- Top with your favorite – butter and maple syrup or could use berries, sliced bananas,
mango, or papaya
Grind oats in food processor or blender until a powder.
In medium bowl, combine all the dry ingredients.
In large bowl whisk together the milk and molasses until blended.
Add dry ingredients and mix just until blended (Batter should be very runny. Set aside a
few minutes to thicken slightly).
Heat griddle or large heavy skillet until hot, add oil or butter.
For each pancake, use 1/3 to ½ cup of the batter
Cook until bubbles appear.
Check that the underside is golden brown.
Flip with special flipper like a GHOST or PUMPKIN or GUITAR
