When I announced last week that I am raw-curious, I meant it.
This weekend I continued my raw uncooking, unbaking adventures and made some of Ani Phyo’s banana nut loaves only mine were more like mookies. According to the make believe Fitness & Spice urban dictionary a mookie is kind of like a muffin and a cookie all in one.
A couple of things before I give up the recipe:
- Objects in the picture are more delicious than they appear
- If you don’t know the proper way to open a banana watch this video I found on You Tube before you proceed to your kitchen:
Now that we got that out of the way, here’s how you make…
Raw Banana Nut Mookies
2 cups cashews (or almonds)
1/4 t salt
2 bananas
A splash of vanilla extract
1 cup pecans (or walnuts)
In a food processor (or high powered blender like a Vitamix) coarsely chop the cashews together and toss in the salt. Add the bananas and vanilla and blend. Throw in the pecans and process until combined. Place the mixture onto a pan with a cookie scoop and flatten with the back of a spoon. Dehydrate at 104 for 6-8 hours. I don’t have a dehydrator so I just set my oven on the lowest setting and left the door open a crack and reduced the baking time by like 4 hours.
What I love about raw baking is that the prep time is quick and painless and you can get rather creative with your recipes, right Lindsay? The down side is that the “baking” takes a bit longer—but it’s worth every second to preserve the nutritional value of your food….that and it tastes great, too.
Now I really must go hit the gym and then work on how to make my photos more appealing.

June 15th 2010Great recipe, but I’m REALLY in awe of this video!! I will try to open my bananas like this next time. Although I’ll tell you I have never had troubles (like this guy says) opening my banana from the stem. When they are really un-ripe it’s difficult, but that’s it. Either way, I’m trying this! It looks fun, just for a change :)
