About this time every year people start talking about Trader Joe’s pumpkin butter.
So while I wait patiently for the grand opening of our first Trader Joe’s I’ve come up with Trader Joanna’s pumpkin butter also known as…
Joanna Sutter’s Pumpkin Butter
- 2 cups Pumpkin Puree
- 1/2 cup Honey
- 2 T Apple Cider Vinegar
- 2 T Cinnamon
- 1/2 t Nutmeg
- 1 T Pumpkin Pie Spice
- 1/4 t Salt
Put all ingredients into a sauce pan and simmer for 45 minutes on very low heat. Stir frequently. Refrigerate immediately.
Now let’s address your questions:
- This sounds incredible! Could I quadruple the recipe and give some away for gifts? Yes, yes you can.
- You have the best recipes! Now tell me, what should I serve this with? Ahh, shucks! Thank you! Here are 5 ways you can enjoy pumpkin butter:
1. Eat it right off the spoon.
2. Spread it on top of whole wheat toast or a protein pancake.
3. Serve it as a dip with apple slices.
4. Stir it into a bowl of ice cream, I mean oatmeal.
5. Blend a spoonful or two into a vanilla protein shake.
