I am not a steak and potatoes kind of girl. In fact, I don’t eat steak or potatoes.
And since I think faux meats like tofu hot dogs and turkeys are wrong, I really didn’t think I’d get all mushy for faux potatoes either.
But this time, I was wrong.
I finally made my first batch of mock mashed potatoes last night. And I may or may not have eaten the entire bowl. With a spoon. While standing at my kitchen counter.
Moving on.
In case you’ve never made this low carb version of “potatoes” before, do it now. Here’s a really easy way to make…
- 1 bag of frozen Cauliflower
- 1/4 cup unsweetened Almond Milk
- 3 T Smart Balance Light Butter
- Salt and Pepper to taste
Poke a few holes in the bag of cauliflower with a fork and toss it into the microwave for about 5-8 minutes until the cauliflower is fully cooked. Remove cauliflower from the bag and put it in your high speed blender or food processor. Blend in the almond milk, butter, salt, and pepper until smooth. Serve.
Now I really must go to the gym so I don’t turn into a a couch potato, but before I do, peas pass the mock potatoes.
