A++ for creativity, but B on execution. I love the idea, and I love low-sugar, low-crap versions of traditional attach-self-to-thigh confections, but the recipe isn't quite right. I wish I were a more talented baker and could offer suggestions for improvement. I tried adding cocoa powder to part of the batch (always good for added polyphenols) but that didn't get over an odd bitter aftertaste. More peanut butter perhaps? I'll keep an eye out for anyone else's experiments! (great site, btw).

Those sound YUMMY! I've done black bean brownies and am always looking for more ways to use legumes in baked goods. OH, and as I quickly skim-read, I thought it said "I used 1 big cookie scoop and it made 1 cookie." Ohhhh .... 1 dozen. Got it. ; )

These look amazing! I will be making them.

@Deb - They still make Peter Pan Whipped Peanut Butter! http://www.peterpanpb.com/peanut-butter-products/whipped-peanut-butter.jsp - It's hard to find, but I buy it at Shaw's which is a New England grocery store chain.

And Great Northern beans are just a type of white bean!
