Little Miss Muffet

I am always looking for ways to sneak in a little extra protein in my diet.

This weekend I was playing around in my test kitchen and came up with this instant protein pudding recipe using curds and whey. Ladies and gentleman, give it up for….

Instructions: Get off your tuffet. Blend all ingredients in your Magic Bullet blender until smooth and creamy. Eat. Watch out for spiders.

Secret Sauce

I add vegetables to every single meal. And, as of last night, I now have a Secret Sauce.

Remember a few weeks ago when I told you about my Sunday Ritual? In a nutshell, my Sunday Ritual includes doing as much advanced food preparation for the week ahead.  All of those vegetables I chopped on Sunday came in handy last night when I wasn’t in the mood for cooking. What I was in the mood for was pizza.

In order to create a veggie pizza with protein, I grabbed my Magic Bullet blender and decided to create a sauce, a Secret Sauce:

  • 2 handfuls of chopped mixed veggies (See the picture above? I used those)
  • 1 small tomato
  • 1/2 cup of cottage cheese
  • A sprinkle of all of the Italian seasonings in my cupboard

I blended all of these ingredients until smooth and spread the mixture over a low carb whole wheat tortilla. I topped the sauce with a few more vegetables and some mozzarella cheese then popped it under the broiler for about 5 minutes.

This pizza was fantastic! Not only was the sauce full of flavor and loaded with hidden vegetables and protein, it was fast and satisfying, too.
