I love two carat diamonds, and as of last night, I’m wearing one! I’M OFFICIALLY ENGAGED!!!!
So, I thought we could celebrate with…
- 3/4 cup shredded carrots (approximately…you guessed it…2 carrots)
- 1 1/2 cups vanilla protein powder
- 1 1/2 cups sugar substitute
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup unsweetened coconut milk (I used So Delicious)
- 3/4 cup warm water
- 3 tablespoons olive oil (you could probably substitute pumpkin or applesauce if you’re not into healthy fats)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/3 cup chopped walnuts
Preheat oven to 350 degrees and spray an 8×8 pan with Pam baking spray. In a large bowl sift together dry ingredients and then slowly whisk in additional ingredients. Fold in walnuts. Pour into prepared pan and bake for 25-30 minutes. Once completely cool, refrigerate and serve chilled. Dust with powdered sugar and garnish with walnuts.
Would I serve this to my wedding guests or bring it for Easter dessert? Probably not. But would I make this recipe for a healthier alternative to a carrot cake? Silly question!
